Homemade Avocado and Salmon Sushi Rolls

Ingredients
- 2 cups Sushi Rice
- 6 tablespoons Sushi Rice Seasoning
- 250g smoked salmon
- 1 fresh ripe avocado
- 4 seaweed sheets
- Kewpie Mayonnaise
- Soy sauce

Method
- Place the sushi rice into the rice cooker and wait until cooked.
- Add the sushi rice seasoning to the cooked rice.
- Place a seaweed sheet onto a bamboo mat, spread the rice across half of the sheet.
- Lay the desired amount of smoked salmon across the rice. Lay slices of avocado on top of the salmon.
- Roll the seaweed sheet halfway with the bamboo mat and squeeze to gather the ingredients inside to form the roll. You should have half the seaweed sheet remaining. Wet hands with a small amount of water, brush the water over the top of the half formed roll, this will allow the rest of the sheet to stick to itself as you use the bamboo mat to complete the roll.
- Cut the roll into desired sized pieces. Serve with Kewpie mayo and soy sauce.
