Method
- Cook the rice according to packet instructions and set aside to cool slightly.Dice the chicken breasts, then cook in a hot pan until fully cooked through. Add Lee Kum Lee Honey & Soy Chicken Sauce while the chicken is still hot and toss to coat evenly.Thinly slice the carrot, cucumber and avocado using a mandoline for a fresh, even texture.To assemble the bowl, add rice as the base, then layer the honey soy chicken, avocado, carrot, cucumber and edamame. Add pickled red onion and pickled ginger for contrast.Finish with a drizzle of Kewpie mayo, a sprinkle of fried shallots and an extra drizzle of the honey soy sauce if desired.
