Honey soy cashew nut tofu stirfry

Ingredients
- 1 tbsp of olive oil
- 1 X packet of sweet chilli tofu
- 1 red capsicum
- 4 portobello mushrooms
- 2 carrots
- 1/2 broccoli
- 1C cashew nuts
- Lee Kum honey & soy chicken sauce
- Woolworths instant rice

Method
- Add 1 tbs of oil to a wok and turn it on high heat.
- Add the tofu until it is partially cooked.
- Slowly add all vegetables until they are softened.
- Add all of the cashew nuts
- Add the entire packet of sauce. Stir the entire dish every so often. Turn the heat down to medium.
- Heat your rice in the microwave.
- Once the rice is cooked, plate up the dish and add sesame seeds (optional).
