Honey & Soy Chicken with Broccolini Spinach and Rice

Ingredients
- 500g Chicken Breast
- 1 Broccolini Family Bunch
- 120g Baby Spinach
- 1 Cup White Long Grain Rice
- 120g Lee Kum Kee Honey & Soy Ready Sauce
- 1tsbp Extra Virgin Olive Oil

Method
- Step 1. Cook the rice- Rinse 1 cup white rice.- Add to a saucepan with 2 cups water.- Bring to a boil, then cover and simmer for 10–12 minutes until cooked.
- Step 2. Prep the chicken & veg- Cut 500 g chicken breast into bite-sized pieces.- Trim the ends off the broccolini if needed.
- Step 3. Cook the chicken- Heat 1 tbsp olive oil in a large pan on medium-high.- Add chicken and cook for 5–7 minutes until mostly cooked through.
- Step 4. Add vegetables- Add the broccolini and cook for 2–3 minutes until slightly tender.
- Step 5. Add sauce & spinach- Pour in 120 g honey & soy sauce.- Add the baby spinach and stir until wilted.- Simmer everything together for 1–2 minutes until the sauce coats the chicken.
- Step 6. Serve- Spoon the rice into bowls and top with the honey & soy chicken and vegetables.
