Inspired Pad Thai

Ingredients
- Valcom paste pad thai
- 1 Buk choy
- 2 Spring onions
- 2 eggs
- 250g Chicken breast
- 2 Bacon rashers
- 1 cup Brown rice
- Olive oil
- 3 cloves garlic
- 1/2 onion
- 60g Crushed peanuts
- 1 lemon

Method
- Add 1 cup rice to 1 & 1/2 cups water and bring to boil. Once boiled reduce temperature and simmer for 20 mins
- Add 2 tbsp olive oil to medium fry pan and heat. Add chicken and cook through. Remove chicken from pan and cover to keep warm.
- Add crushed garlic and diced onion to same pan and cook until translucent. Add one sliced spring onion and sliced leaves of buk choy and stir fry for 2 - 3 mins.
- Return cooked chicken to pan with 1/2 jar of Valcom Paste Pad Thai and stir fry. Add finely sliced puk choy stems and cooked rice. Stir fry for 2 minutes ensuring sauce is combined.
- Serve garnished with sliced spring onion, crushed peanuts and lemon wedge.
