Ingredients
- Noodle
- 2 packs Obab (200g) Korean sweet potato glass noodles (dangmyeon)
- Water for boiling
- Beef
- 120 g beef rump, thinly sliced
- 1 tbsp soy sauce
- 1/4 tsp sugar
- 1/2 tsp sesame oil
- Pinch black pepper
- Vegetables
- ½ onion, sliced
- 1 mini red bell pepper, thinly sliced
- 1 mini orange bell pepper, thinly sliced
- 1 mini yellow bell pepper, thinly sliced
- 120g baby leaf spinach
- 5pcs small dry shittake mushrooms, soaked in warm water for 1 minute, sliced
- 1 carrot, julienned
- 1 tsp minced garlic
- Japchae sauce
- 2 tbsp soy sauce
- 1/2 tbsp sugar
- 1 tbsp sesame oil
- Egg Garnish
- 1 egg
- 1tbsp oil for the pan
- pinch salt
- Garnish
- 1 tbsp chopped green onion/shallots (green part only)
- 1tsp toasted sesame seeds

Method
- Cook the noodlesBoil water in a pot.Cook the dangmyeon for 8 minutes until soft and chewy according to the package.Drain and rinse lightly with cold water.Set aside.
- Prepare the egg garnishBeat 1 egg with a pinch of salt.Heat a lightly oiled pan on low heat.Cook the egg like a thin omelette.Remove and slice into thin strips.Set aside for garnish.
- Cook the beef.Heat 1 tsp oil in a pan.Add beef with soy sauce, sesame oil, and pepper.Stir-fry 2–3 minutes until cooked.Remove and set aside.
- Stir-fry vegetablesUsing the same pan:Add garlic and onion, cook 1 minute.Add carrot and mushrooms, cook 2 minutes.Add the colourful bell pepper, cook 1 minuteSet aside.Boil water in a pot.Add spinach, add a pinch of salt, blanch for 30 seconds and rinse with cold water, squeeze excess water then set aside.
- Japchae sauce.Combine all the sauce ingredients soy sauce, sugar,sesame oil, and black pepper.
- Combine everything.Add cooked noodles and sauce into the bowl.Toss noodles, cooked beef and vegetables together 2–3 minutes.
- Garnish.Add garnish green onion, egg strips and sprinkle the toasted sesame seeds.Serve the beautiful colourful "obangsaek-five colour" Japchae in one bowl.
