Japanese coconut rice bowl

Ingredients
- Sushi rice half cup
- Coconut milk one cup
- Sushi seasoning one tablespoon
- Soy sauce and mirin cured egg yolk - one
- Nori seaweed- four pieces
- Miso caramelised onion
- Kimchi one serve
- Mixed salad leaves
- Spring onion omelette
- Fried shallots to garnish
- Kewpie one tablespoon

Method
- Cook half cup sushi rice in one cup of coconut milk. Once cooked add sushi seasoning and kewpie and mix well
- Chop one white onion finely and add one tablespoon of butter , two tablespoon of mirin and one table spoon of soy sauce and a small sachet of miso. Cook over low heat for twenty minutes.
- Cure one egg yolk in one tablespoon of soy and two tablespoons of mirin.
- Chop spring onions and add to egg whites and make an omelette .
- Serve the rice on a bed of mixed green leaves , side of Nori , kimchi and pour the miso onion on top. Garnish with the fried shallots!
