Japanese inspired prawn rolls

Ingredients
- 1 kg cooked king prawns, peeled and deveined
- 4 brioche rolls
- 1 iceberg lettuce
- 1 avocado
- Handful of chives
- 1 lime
- 2–3 tbsp Kewpie mayonnaise

Method
- Finely chop the peeled and deveined king prawns and transfer to a bowl.
- Remove the core from the iceberg lettuce and finely shred the leaves.
- Finely chop the chives and slice the avocado thinly.
- Add half the chives to the prawns, then zest and juice the lime over the mixture. Stir through the kewpie mayonnaise until well combined.
- Lightly toast brioche rolls in a sandwich press or pan until golden.
- Slice rolls in half and layer with avocado, shredded lettuce, and a generous spoonful of the prawn mixture.
- Finish with the remaining chives and serve immediately.
