Japanese Savoury Pancake with Miso, Tofu & Shiitake Mushrooms

Ingredients
- 1 cup plain flour
- 2 eggs
- 3/4 cup water
- 1 tablespoon miso paste
- 150g firm tofu mashed
- Filling:
- 1 cup finely shredded cabbage
- 3 shiitake mushrooms, sliced
- 1 kaffir lime leaf, very finely sliced
- 1 sheet nori, shredded
- 1 tablespoon sliced chestnut
- For topping:
- Bonito flakes
- Japanese mayo
- Okonomiyaki sauce
- Spring onions
- Coriander to decorate plate

Method
- Make batter. Whisk flour, eggs, water and miso until smooth. Fold in mashed tofu for fluffiness
- Add fillings . Stir cabbage, shiitake, kaffir lime leaf , chestnuts and shredded nori into batter
- Cook pancake. Heat an oiled frying pan on medium. Pour half the mixture and shape into a thick pancake. Cook ~4-5 min per side until golden and cooked through.
- Finish & top. Drizzle with mayo and sauce. Sprinkle bonito flakes on top and watch them "dance" from the heat. Sprinkle sliced spring onions to decorate.
