Japanese Stir Fry

Ingredients
- 270g Soba Noodles
- 2 tbs vegetable oil
- 500g Chicken thighs, diced thickly
- 1 Brown onion, diced
- 1 garlic clove, crushed
- 1 tbsp garlic, crushed
- 60ml Teriyaki Marinade
- 2 tbsp Soy sauce
- 1 tbsp Rice wine vinegar
- 350g superfood vegetable mix

Method
- Cook the noodles in a large saucepan of boiling water following packet directions or until just tender. Refresh under cold water. Drain well.
- Meanwhile, heat half the oil in a wok over medium-high heat. Stir-fry the chicken thighs, for 3-4 mins or until just cooked through. Transfer to a bowl.
- Heat the remaining oil in the wok over medium-high heat. Add the onion and stir-fry for 2-3 mins or until the onion softens. Add the garlic and ginger and stir-fry for 1 min.
- Add teriyaki marinade, soy sauce and vinegar to wok or pan. Stir-fry for 1 min. Add vegetable mix. Stir-fry for 1 min or until heated through. Return chicken to wok with noodles. Toss for 1-2 mins or until combined and heated through.
