Theme: One Bowl Wonder
Japanese style gochujang beef bowl

Ingredients
- 500g lean beef mince
- 3 tsp minced garlic
- ½ tsp chilli flakes
- 1 and ¼ ground ginger
- 1 tsp crushed chili paste
- 60ml soy sauce
- 3 spring onions
- 1 cucumber
- ½ red onion
- 1 cup edamame beans
- Jasmine rice to serve
- Obento sushi seasoning
- 1/2 cup Obento rice wine vinegar
- 2 tsp sugar
- 1tbsp salt
- Nori Komi furikake rice seasoning
- Pickled ginger to serve

Method
- 1. Prep the pickled cucumber and onion - Combine the cucumber, onion, half the vinegar, the sugar and salt in a medium bowl. Toss to combine. Set aside, stirring occasionally, for 10 mins to develop the flavours
- Cook the mince - Heat oil in a medium frying pan over high heat. Add mince and cook, stirring with a wooden spoon to break up lumps, for 10 mins or until mince is browned and any liquid evaporates. Add the garlic, chilli and ginger and cook, stirring, for 1 min or until aromatic. Stir in the soy sauce and remaining vinegar.Bring to the boil, then remove from heat. Add half the spring onion and stir to combine.
- Prep rice - mix sushi seasoning into rice and add rice seasoning to taste
- Plate up - Serve with remaining spring onion, sesame seeds, rice, edamame beans
