Japanese Style Sweet Potato Cakes

Ingredients
- 500g Sweet Potato Puree
- 1 tbsp Soy Sauce
- 1 tbsp of rice wine vinegar
- 1/4 teaspoon of White Pepper
- 1 Onion Diced.
- 250g of peas and/or corn
- 200g of oat flour
- Japanese Kewpie Mayonnaise

Method
- Prepare the sauce in advanced by adding the soy sauce, rice wine vinegar and white pepper powder together.
- Combine the other ingredients (with a dash of salt) in a large mixing bowl, once well combined set aside into round ball shaped patties.
- In a large pan, on a medium-high heat, place the potatoe balls in the pan with 2tbsp of neutral oil (rice bran e.g.) and wait 3-4 minutes until each side becomes crisp and golden brown, repeat on the other side then remove.
- Place on a wire rack to drain oil, repeat with the other balls. Once finished, can be served with a green salad and a dash of Kewpie mayo.
