Katsu chicken

Ingredients
- Panko bread crumbs
- 1kg Chicken breast
- 2 eggs
- 100g flour
- Salt
- Vegetable oil

Method
- Add flour, eggs and panko crumbs to three separate bowls. Whisk the eggs, add salt to the flour to taste.
- Cut the breasts into schnitzel portions, about three per breast.
- Dredge the chicken pieces in the flour, then the egg, then the panko crumbs. Add a small amount of oil to a hot pan and add a few pieces of the chicken. Cook one side until golden brown before turning over and adding a little more oil to the pan. When golden brown and cooked through, about 8 minutes total remove from pan and place on paper towel. Serve with lemon or kewpie mayo
