Ingredients
- 8 Lg Potatoes
- 6 diced gherkins
- 4 hard boiled eggs
- chopped parsley, dill and green fresh herbs
- 3 tblspns kewpie mayo
- 2 Tblspns Olive Oil
- Salt & Pepper to taste
- 1 Tblspn Capers
Method
- Cook diced peeled potatoes till semi firm / soft
- boil eggs
- chop all herbs and put aside in a bowl
- dice gherkins and capers, put aside in a bowl,
- rinse potatoes and allow to cool
- dice the eggs when cool,
- In a large bowl add potatoes, eggs, gherkins, capers and all green herbs, salt and pepper, toss gently together, in a small bowl add the kewpie mayo with olive oil (optional) mix and add to potatoe salad, mixing gently into the salad. Allow to cool in fridge for 30 mins or more, serve chilled.
