Khao Kha Yum Kung(Thai-style spicy mixed prawn rice with fish sauce dressing))

Ingredients
- 1 cup Jasmine rice (cooked)
- 5-7 no. Prawns (peeled and deveined)
- 1/2 boiled egg
- 1 tbsp. Garlic (Thinly sliced)
- 1 tbsp. Shallot (Thinly sliced)
- 1 tbsp. Coriander (chopped)
- 1 tsp. fresh hot baby chili (Thinly sliced)
- as need Cucumber (cut as desire)
- as need Salad leaves
- 1/2 Lime
- 1 - 2 tbsp. Squid fish sauce
- 1 tbsp. Lime juice
- 1 tsp. Caster sugar or white sugar
- 1/2 tsp. or as need Dried chili flakes

Method
- Prepare proteins : Boil the prawns until just cooked, then drain. In separate pot, Boil egg for 10 minutes, then peel and cut in half. Set both aside.
- Prepare the dressing : mix together the fish sauce, lime juice, sugar, and chili flakes until the sugar is fully dissolved.
- Prepare the components : Slice the garlic, shallots and fresh chili. Chop the coriander and prepare Salad leaves, cucumber, and lime for plating.
- Assemble : Place warm cooked jasmine rice on a serving plate. Arrange the prawns, boiled egg, lime, and herbs around the rice. Place salad leaves, cucumber for garnish.
- Serve with fish sauce dressing on side and mix well before eating.
