Khao Pad Sapparod (Pineapple Fried Rice)

Ingredients
- I cup fresh pineapple
- 2 tbsp vegetable oil
- 3 cloves of chopped garlic
- 1/2 red capsicum diced
- 3 cups of white rice cooked the previous day
- 1/2 cup diced carrot
- 1/2 of an onion, diced
- 1/2 cup of frozen peas
- 1 tbsp Lee Kum Kee Panda Brand Oyster Sauce
- 1 1/2 tbsp Sqiud Brand Fish Sauce
- 1/2 tsp palm sugar (or brown sugar)
- 2 eggs
- Green onions to garnish

Method
- This retro favourite is a flavour-packed meat-free meal!Heat a splash of oil, scramble the eggs, and set aside to add at the end.
- Add the rest of the oil and fried onion, and garlic, and cook for 1-2 minutes
- Add the capsicum and carrot and cook for 2 minutes.
- Add the peas, then incorporate the cooked rice (I prefer jasmine rice) and the oyster and fish sauces. Cook, stirring continuously, for 3 minutes, or until the rice is lightly caramelised.
- Add pineapple, cook for 1 minute. Return the egg to the dish and serve!
