Kid’s Lunchbox Avocado Sushi

Ingredients
- 1/3 cup uncooked sushi rice
- 2 tablespoon Obento Sushi Seasoning
- 1 sheet Obento Yaki Nori for sushi
- Avocado

Method
- Cook sushi rice as per the packet. Remove from heat and rest five minutes.
- Add the sushi seasoning and mix through. Spread rice on a plate and cover with cling film, place in the fridge and allow to cool.
- Place the yaki nori on a bamboo sushi mat. Using wet fingers, spread the rice evenly over the yaki nori leaving a 2-3cm edge to seal once rolled.
- Place cut avocado in a strip along the centre of the rice.
- Carefully roll the yaki nori to enclose the avocado and rice in the yaki nori. Using fingers, wet the exposed end of the yaki nori and then finish rolling to the seal the sushi.
- Cut with a wet knife into two long rolls or more to fit into a lunchbox. Serve with soy sauce.
- Can be made the day before, and keeps for two days in the fridge.
