Ingredients
- Laksa paste
- Tofu
- Mushrooms
- Sugar Snap peas
- Coconut milk
- Water
- Chilli flakes to taste
- Bean sprouts
- Lime juice (optional)
- Udon noodles

Method
- Soak udon noodles in boiling water and set aside.
- Heat the paste in deep pan, with tablespoon of oil. When fragrant add the coconut milk and water. Bring to simmer
- Add tofu, snap peas and sliced mushrooms. Simmer for 5 mins
- Drain noodles and distribute to bowls. Serve soup into bowls (add chilli flakes to taste)
- Garnish with bean sprouts and lime juice to taste
