Laksa (Weekly Meal Prep)

Ingredients
- 460g Valcom Laksa Paste
- 400ml coconut milk
- 3 cups chicken stock
- 5 eggs (boiled)
- 1 bunch broccolini (chopped in half)
- 2 carrots
- 50g dried shiitake mushrooms (sliced)
- 2-3 bunches bok choy (chopped)
- 250g bean shoots
- 200g bean thread vermicelli noodles (5 x 40g portions)
- Sesame seeds
- Juice of 2 limes
- 2 cups ice

Method
- MEAL-PREP FOR DAILY LAKSA AT WORK:Heat wok over medium-high heat, add laksa paste and stir-fry for 1 minute. Add the stock, coconut milk. Bring to the boil, reduce heat to medium-low and simmer for 10 minutes. Squeeze lime juice in and stir. Remove from heat, leave to cool.
- Wash broccolini and carrots. Chop broccolini in half and slice once lengthways. Chop carrot thinly. Add to steel steamer, add cover, put aside.
- Add eggs and water to saucepan. With carrots/broccolini in steamer on top of saucepan, bring to the boil for 10 mins. Remove from heat. Sit covered for 10 mins. When 10 mins is complete, drain hot water leaving eggs in saucepan. Add 1 cup of ice and top with water, leave to chill. Blanch broccolini and carrots with 1 cup of ice in bowl.
- Wash bean shoots and bok choy, leave to drain.Remove shells from eggs and drain broccolini/carrots.
- Using a ladle, distribute laksa soup evenly into 5 glass airtight containers. Evenly portion the vegetables (dried mushrooms, bean shoots, carrots, broccolini, bok choy), eggs and a sprinkle of sesame seeds into 5 other containers.
- AT WORK:– Add 1 x 40g portion bean thread vermicelli noodles to container with boiling water.– Add 1 container of laksa + 1 container of veg/egg to microwave and heat for 2 mins, loosely covered.– Add veg/egg to larger serving bowl, followed by laksa soup on top. Drain noodles and add to soup.
