Lobster soy Sushi Bites on Baked Wonton Sheet Base

Ingredients
- Base• 12 wonton sheets (these form the crispy base
- • 4 sushi sheets (nori), cut into small pieces
- • 1 1/2 cups cooked sushi rice
- Lobster• 1 whole cooked lobster, meat removed and chopped
- • 2 tbsp soy sauce
- • 1 tsp sesame oil
- Soy Dressing• 3 tbsp soy sauce
- • 1 tbspsesame oil
- • 1 tbsp rice vinegar
- • 1 tsp honey
- • 1/2 tsp grated fresh ginger
- • 1/2 tsp sesame seeds
- Toppings• 1 large avocado, sliced
- • 4 radishes, thinly sliced
- • 1/2 cup shredded carrot
- • 1/2 cup microgreens
- Small bunch chives
- • 1 spring onion, finely sliced
- Lime wedges

Method
- Instructions1. Make the Wonton Base Preheat oven to 180°CPlace wonton sheets into a muffin tray to form small cups. Lightly spray with oil and bake for 8-10 minutes until golden and crispyThese baked wonton sheets become the crunchy base for the lobster bites.
- 2. Prepare the Lobster . Remove lobster meat from the shelk and chop into bite-size pieces Toss with soy sauce and sesame oil to lightly season.
- 3. Make the Soy Dressing In a bowl whisk together:soy sauce• sesame oi• rice vinegar• honey• ginger• sesame seeds
- 4. Assemble the Bites On each baked wonton sheet base, add:• a spoonful of sushi rice• a small piece of sushi sheet (nori• |obster pieces• avocado slice• shredded carrot• radish slice• microgreens and spring onion and chives
- 5. Finish Drizzle lightly with the soy dressing and serve with lime wedges.
