Low fodmap Singapore noodles

Ingredients
- 2 tblsp soy sauce
- 2 tblsp Chinese cooking wine
- 2 tspn curry powder
- 1/2 tspn sugar
- 1/2 tspn black pepper
- 100g vermicelli noodles
- 2 tblspn peanut oil
- 2 eggs
- 1 red capsicum
- 1-2 carrots
- (Optional for low fodmap) garlic and ginger
- 1 chicken breast
- (Optional) bacon or roasted pork pieces

Method
- Combine sauce ingredients in a small jug. Set aside.
- Place rice noodles in a bowl, cover with boiling water for 10 mins. Drain and set aside.
- Heat oil in wok on medium heat. Add beaten eggs to cook omelette style. Remove from wok and set aside.
- Slice or dice meats and cook in wok.
- Add garlic and ginger to taste. Add sliced capsicum and carrot and spring onion.
- Add noodles, egg and sauce. Stir through thoroughly and enjoy!
