Mamma’s one handed noodle bowl

Ingredients
- 1 tbsp Kewpie mayonnaise
- 1 tbsp Hoisin sauce
- 1 tsp Fish sauce
- 4 slabs of Rice noodles
- 1 handful of Mint
- 500 grams Chicken breast or thigh
- Juice of half a lime
- 1 carrot and 1 cucumber julienned (Whatever veggies you have in the fridge)
- Vegetable oil for cooking

- LEE KUM KEE - HOI SIN SAUCE
- SQUID BRAND - FISH SAUCE
Method
- Slice your chicken into bite size pieces and cook in vegetable oil
- While the chicken is cooking, prep your fresh vegetables and mint (ideally carrot and cucumber, but anything fresh and crunchy will do, like cabbage, edamame etc)
- Cook the rice noodles as directed
- Mix the Kewpie, hoisin, and fish sauce together as a dressing.
- Assemble a bowl with noodles, chicken, fresh veg and then top with mint, dressing and fresh lime juice.
