Mango Soba Noodle Salad

Ingredients
- Hakubaku Organic Soba Noodles 270g
- 2 mangos, chopped into cubes
- 1 bag of snow peas, finely chopped
- 2 large carrots, finely chopped
- 1/2 cup of coriander leaves
- 1/2 cup of mint leaves
- 1/4 cup Obento rice wine vinegar
- 1 tablespoon brown sugar
- 2 cm ginger, finely grated
- 1/2 lime, juice squeezed
- 1/4 cup sweet chilli sauce

- HAKUBAKU - ORGANIC SOBA NOODLES
- OBENTO - RICE WINE VINEGAR
Method
- Cook the soba noodles according to packet instructions, rinse in cold water, then allow to cool in a bowl.
- Prepare salad ingredients and add to soba noodles.
- To make the dressing, combine the rice wine vinegar, brown sugar, ginger, lime juice and sweet chill sauce. Stir to combine and add to salad. Enjoy!
