Theme: One Bowl Wonder
Massaman Chicken and 5 Veg

Ingredients
- 2tbsp coconut oil
- 1/2 jar Valcom Massaman Curry Paste
- 400ml coconut milk
- 600 gm cubed chicken tenders
- 2 tsp tamarind puree
- 1 tbsp fish sauce
- 1 tsp kaffir lime marmalade
- 1 cubed onion
- 1 large cubed potato, parboiled
- 1 stick celery
- 1/2 cup frozen peas
- 1 sliced carrot, parboiled

- SQUID BRAND - FISH SAUCE
Method
- Sizzle curry paste in oil 2 minutes
- Add 200 ml coconut milk and cook until seperated
- Add and stir fry chicken over high heat 2 minutes
- Add tamarind, fish sauce and marmalade.
- Add vegetables and simmer on low until carrot and potato soften.
- Serve with rice. Enjoy!
