Massaman Curried Sausages

Ingredients
- 6 sausages
- 2 tablespoons of massaman curry
- 1 small can of coconut cream
- 400g sweet potato, chopped into 2cm chunks
- 800g tinned tomatoes
- 1/2 red capsicum
- 200g frozen peas
- 1 cup of water
- Scoop of sour cream to serve

Method
- Fry sausages in a saucepan until cooked. Take out of pan and set aside.
- In the same saucepan, add massaman curry, tinned tomatoes and coconut cream. Bring to a boil and then reduce to a simmer.
- Add sweet potato and simmer until sweet potato is soft.
- Add capsicum and cook for a further 2 minutes.
- Chop sausages into thirds and add to the sauce mixture. Add peas until the massaman curry is piping hot!
- Serve with rice (or cauliflower rice) and a scoop of sour cream! Enjoy!
