Mid Week Red Curry mince and veggie Combo

Ingredients
- 500g minced pork
- 1 TBL olive oil
- 1 chopped white onion
- 2 cloves of garlic
- 2 tablespoons of Valcom Authentic Thai Red Curry paste
- 2 tablespoons coconut milk
- Salt and pepper
- 1 cup of Birds Eye frozen diced carrot cauliflower and broccoli

Method
- Fry onions and garlic till lightly browned.Add 500g minced pork . Break up and toss into onion/ garlic mixture. Cook 10 minutes .Add Thai Red paste ,coconut milk salt and pepper.
- Cook until mince has turned brown an crunchy around the edges.Add a cup of finely diced frozen carrot cauliflower and broccoli. Mix and simmer untilheated thru .
