Mid-week spicy chicken and cucumber salad

Ingredients
- Pre-mixed asain coleslaw
- Baby cucumbers
- Spicy chicken of your choice
- Kewpie mayonaise
- Squid fish sauce
- ABC sweet soy sauce kecap manis
- Crispy chilli oil
- Obento rice wine vinegar
- Seasame oil
- Fried shallots

Method
- Put your favourite spicy chicken in the air fryer on 180 degrees and cook for 15 mintues. Add your favourite spring rolls. Cook for another 5 mins. Cook time may vary dependent on your chicken brand - I am not responsible for any under cooked chicken here...
- While chicken is cooking prepare your favourite pre-bagged asain slaw, available from your local supermarket, we are going for quick and easy!
- Time to prepare the star, the cucumber salad! We are going to put in abit more effort here because this is where the magic happens. Dice baby cucs until your heart is content (you cant get chubby from baby cucs so go for gold). Put in a cylinder container. Add the folliwing ingrediants by eye or by heart:- ABC kepac manis sweet soy sauce (fair shake)- Obento rice wine vinegar (dash)- Squid fish sauce (dash)- Seasame oil (dash)- Crispy chilli oil (a good teaspoon, however your mouth, your choice)- Chilli flakes (optional)Give that a good shake - taste test and add a dash here and there accordingly!
- Dish up your cucumber salad and garnish with some fried shallots. Add your asain slaw, your favourite condiments and finally your (fully cooked) spicy chicken.Give your spicy chicken some lovin with some kewpie mayo (if you want to live on the wild side you can add sirachi kewpie as well!). Enjoy your quick and easy, mid-week asain sensation - spicy chicken and cucumber salad!
