Mince-terpiece Kecap Bowl

Ingredients
- 400g Egg noodles
- 2 carrots
- 2 zucchinis
- 2 broccoli florets (or 300g of cut broccoli florets)
- 120g baby spinach leaves
- 4 eggs
- 30g crushed peanuts
- Chilli flakes
- 4 tbsp oyster sauce
- 4 tbsp kepap manis
- 2 tbsp soy sauce
- 500g pork mince

Method
- 1. Cook the noodles & prep the veg• Bring a medium saucepan of boiling water to the boil.• Add 400g egg noodles and cook for 4–5 minutes until tender. Drain and rinse under cold water.• Slice 2 carrots into thin half‑moons.• Slice 2 zucchinis into thin sticks.• In a small bowl, mix together:• 4 tbsp oyster sauce, 4 tbsp kecap manis, 2 tbsp soy sauce, 1 tsp chilli flakes
- 2. Cook the vegetables• Heat a drizzle of oil in a large frying pan over medium‑high heat.• Add carrot, 300g broccoli florets, and zucchini. Stir‑fry for 5–6 minutes until tender.• Add 40g ginger paste and cook for 1 minute until fragrant.• Transfer vegetables to a bowl.
- 3. Cook the mince & fry the eggs• In a small frying pan, heat a drizzle of oil over medium‑high heat.• Crack in 4 eggs and fry until the yolks are cooked to your liking. Set aside and keep warm.• Return the large frying pan to high heat.• Add 500g pork mince
