Minced Turkey with Eggplant and Tofu

Ingredients
- 500g Turkey Mince
- 300g Firm Tofu
- 1 Medium Eggplant (sliced)
- 4 Carrots (chopped)
- 2 Tablespoons Chopped Ginger
- 1 Tablespoon Olive Oil
- 2 Teaspoon Sesame Oil
- 1 Tablespoon Obento Rice Wine Vinegar
- 3 Tablespoon Light Soy Sauce
- 1.5 Cups of Uncooked Brown Rice

Method
- Cook brown rice in a pot and simmer in boiling water for 30 minutes.
- In a separate bowl, mix sesame oil, rice wine vinegar and soy sauce.
- In a large pan, heat olive oil up and stir fry ginger until brown. Add in minced turkey, then when half cooked, add tofu. Mix in sesame oil, rice wine vinegar and soy sauce mixture. Add in carrots and then one minute after, add in eggplant. Cook for another 5-7 minutes or until eggplant becomes soft and minced turkey and tofu are well cooked.
- To dish up: Place brown rice in a bowl then topped with the mince turkey and tofu stir fry and enjoy!
