Miso Crab Cakes

Ingredients
- 4 Cups Panko Bread Crumbs
- 1 Egg
- 1 Lemon, zested
- 1 Spring Onion, Chopped
- 2 Tablespoons Miso
- 2 Tablespoons Japanese Mayonnaise
- 450 Grams Crab Meat
- Olive or Grapeseed Oil for shallow frying
- 1 Pack Toasted Seaweed Sheets, chopped
- 1 Tablespoon Sesame Seeds, toasted

Method
- Combine 1 cup panko bread crumbs, egg, zest, green onion, miso, mayonnaise, and crab meat, mix well.
- Form mixture into 2-inch cakes and toss in remaining 3 cups of bread crumbs.
- Heat oil in fry pan and shallow fry cakes at medium-low heat until browned, approx 2-3 min on each side
- Mix together chopped seaweed and sesame seeds, sprinkle on top of Crab Cakes and serve.
