Miso Baked Vegetables

Ingredients
- 1 large crown Broccoli, 1 large crown of cauliflower , 6 or 7 baby carrots.
- 1 Tbs Avocado oil
- 1/4 cup Mirin
- 1 Tbs Miso Paste
- 1 Tbs Rice Vinegar
- 1 Tbs avocado oil (additional for sauce)
- 1 Tbs Pure Maple Syrup
- 1 Tbs Sesame Seeds

- OBENTO - MIRIN SEASONING
- KEWPIE - MAYONNAISE
Method
- Drizzle avocado oil over Vegetables and bake for 20 mins in 180 degree oven in a shallow baking dish.
- To Make the sauce, heat Mirin until simmering and leave simmer 5 mins until reduced but not burned.
- Add Miso paste, rice vinegar, avocado oil and Maple syrup and wisk until smooth and continue to simmer for 1 minute.
- Remove pan from stove and pour sauce over baked vegetables. Sprinkle with sesame seeds. Serve with Kewpie sauce as an optional side.
