Miso butter corn ribs with yuzu & nori flakes

Ingredients
- 3 corn cobs
- 70g butter
- 1 & 1/2 tbsp miso paste
- 1/2 tsp ground Sichuan pepper ( double if you like spice)
- 1 spring onion sliced
- 1 nori sheet cut into flakes
- Kewpie yuzu dressing for finishing
- Corriander for garnish
- Kewpie Siracha Mayo to finish
- 1 tbsp vegetable oil

Method
- Peel the corn cobs, top and tail and slice in quarters length ways to create the “ribs”
- In a large glass bowl melt the butter in the microwave. Then stir in the miso paste, Sichuan pepper & half the oil.
- Add the corn ribs to the bowl and stir to coat throughly.
- Slice the spring onions finely and use kitchen scissors to cut the nori into small flakes.
- Heat the remaining oil in a pan on medium heat. Add the corn ribs and cook for 6-8 minutes.
- Arrange corn on a plate and finish with yuzu dressing, Siracha mayo, top with nori flakes, spring onions and corriander .
