Miso glazed chicken and eggplant with brown rice and sesame broccoli

Ingredients
- 2 tbsp red Miso paste
- 60 ml Sesame oil
- 50 ml Mirin
- 2 tbsp Honey
- 30 ml Rice wine vinegar

Method
- Whisk ingredients together to form the marinade for the chicken and eggplant. Brush marinade onto chicken and salted eggplant, add sesame seeds and grill until cooked and crispy
- Cook rice to your liking
- Blanch broccoli and toss with sesame oil and salt before serving.
