Miso glazed eggplant

Ingredients
- 800g eggplant
- 45g red miso paste
- 1.5 tablespoons mirin
- 2 teaspoons cooking sake
- 1.5 teaspoons sugar
- Spray oil
- Sesame seeds

Method
- Preheat oven to 200 degrees
- Cut eggplant in half, place on tray skin side down and score
- Spray with oil and bake for 30 minutes
- Mix glaze ingredients
- After 30 minutes, spread glaze on eggplant
- Cook for a further 15 mins
- Turn to grill and caramelise
- Take out and sprinkle with sesame seeds
