Miso Soup

Ingredients
- Water: 1½ cups (375 ml)
- Dried shiitake mushrooms: 2 small pieces(or about 5 g)
- Onion: ¼ small onion, thinly sliced
- Miso paste: 1 tablespoon
- Yaki nori seaweed: ½ sheet, torn into small strips

Method
- Soak dried mushrooms (shiitake works best) in hot water for 10–15 minutes.Keep the soaking water, it becomes a rich, umami broth.Slice the softened mushrooms and set aside.
- Pour the mushroom soaking liquid into a pot (top up with water or dashi if needed).Add sliced onions and the mushrooms.Simmer gently for 5–8 minutes until the onions soften.
- Turn the heat to low (do not boil).Dissolve miso paste in a small bowl with some hot broth, then stir back into the pot.Add torn pieces of yaki nori seaweed right at the end. Serve immediately while fragrant and fresh.
