No water Korean steamed chicken magic soup

Ingredients
- Whole chicken
- Napa cabbage
- 1 1/2 apple ( sweet apple )
- 1 onion
- 1 shallot
- Galanga
- Calamanise
- Fish sauce
- White rum just a little for flavour
- Salt and pepper to taste

- SQUID BRAND - FISH SAUCE
- KEWPIE - MAYONNAISE
Method
- Prep veg, thinly cut up onions and shallots. Cut cabbage in rough pieces. Before prepping veg I cleaned the chicken with salt and put in submerged into water. I cut my calamanise in half’s and stuck that inside the chicken later because what am I supposed to do with calamanise seeds and why are they so big. I also thinly cut my galang which I don’t think I was using right, I thought it was like ginger I’m not sure. I’ve heard uncle Roger say that ingredient name before but I’ve personally never used it so if you have any tips I’m happy to take it. Thinly sliced 3 garlic cloves. Cleaned my knife cut the apple the recipe required 1 1/2 apple which was planned by me as I was looking forward to my half an apple treat to reward myself for cooking such a healthy dish. I stand in the kitchen dancing eating my apple thinking about apple skin facts are they more healthier than the flesh of the fruit idk I’m just a girl. I cut the apple into slices.
- Assembly onions, shallots, apples , cabbage, salt , chicken , garlic , galang, rum , fish sauce. I also shoved the calamanise into the chicken
- On low heat I left it alone for 60mins. If you live in an older house and or don’t cook with real fire (sadly I don’t) I set on 3 for 20 mins then 1 for the rest of 40 mins. Also all the recipes and even google will try to tell you need a special caste iron pot (dream pot), pressure cooker or Korean rice cooker. As a girl in her early 20s in a recession I don’t have any of these but if you can send me one it would bring me great joy. I used a regular pot and I did think oh maybe it won’t seal and was going to make a plain flour dough, roll it out and use that as a sealing mechanism like they do in Arabic countries but I had faith everything was gonna be okay and I’ve been trying not to micromanage myself. It worked I also used regular cabbage because I had that in the fridge but I would recommend the Napa it is a Korean inspired recipe and I will try Napa next time and let everyone know how it goes Much love,Fae
