Nutty Noodles

Ingredients
- Soba noodles 2 sleeves
- Broccolini 1 bunch
- 2 carrots grated
- 15 cherry tomatoes quartered
- 1 Cucumber
- 1 long chilli
- 1/2 cup roasted cashews
- Bean sprouts 1 cup
- 1/4 cup sesame oil
- 1 teaspoon of fish sauce
- 2 days tablespoons of sweet chilli sauce
- 1 teaspoon light soya sauce
- 1/2 cup edamame beans
- Juice of a lime
- Fresh mint
- Thai basil

Method
- Bring pot of water and salt to the boil Add broccolini and blanch for 2 minutes Remove and run under cold water
- Cook soba noodles as recommended on pack in remaining boiling water Remove strain put in large bowl and add 1/3 of sesame oils
- Cut broccolini and add to bowl
- Add remaining vegetables, mint and Thai basil
- In a jar mix sesame oil and all sauces and lime juice and then toss through ingredients in bowl
- Seperate into 4 bowls, top with cashews and fresh pieces of lime
