
Ingredients
- 6 large eggs
- 200g chickpea flour
- 1/2 tsp baking powder
- 200g shredded white cabbage
- 30g choppped spinach
- 4 spring onions chopped
- 1 tbsp canola oil
- 6 rashers bacon
- Kewpie Japanese mayonnaise
- ABC sweet soy sauce
Method
- Whisk the eggs, flour and baking powder together in a bowl.
- Stir in the cabbage, spinach and spring onions until roughly combined. Add the chopped bacon.
- Heat a medium non-stick frying pan over medium heat. Spoon out a quarter of the batter and cook for 8 minutes until mostly cooked through. Gently and carefully flip over and cook for another 8 minutes until browned on both sides and cooked through.
- Repeat for the remaining batter.
- Serve the okonomiyaki drizzled with the mayonnaise and sweet soy.
