Okowa Rice with pork

Ingredients
- 200g pork belly cut into 2-3cm
- 100g bamboo shoots chopped
- 3 cups glutinous rice
- 100g carrot chopped
- 1.5 Tbsp sugar
- 1.5 Tbsp soy sauce
- 1 Tbsp cooking sake
- 300ml chicken stock
- 1/4 cup pine nuts
- 1.5 Tbsp sesame oil

Method
- Soak Rice in water for 8 hours.Drain water 30 minutes before cooking.
- Fry pine nuts with low heat until slightly brown. No oil required. Set aside.
- In a pot, heat sesami oil. Fry pork until brown.
- Add carrot, bamboo shoots and Shiitake to the pot. Mix with pork in medium heat for few minutes.
- Add stock, sugar, soy sauce, cooking sake and a pinch of salt.Bring to boil. Turn the heat to low and cook for 20 minutes, or the juice become 1/3.
- In a big bowl, mix rice and pine nuts . Add pork and veggies and mix well.
- Steam the rice for 20 minutes or until cooked in high heat.
- Garnish with cut nori and kimchi.
