Omu‑Rice Paper Roll

Ingredients
- 1 egg
- ½ teaspoon soy sauce
- 1 sheet roasted seaweed (Obento yaki nori)
- 1 sheet rice paper (bánh tráng)
- 1 tbsp olive oil

Method
- Crack your egg into a bowl, add the soy sauce, and give it a good mix with a fork.
- Warm a frypan over medium heat and add the olive oil.
- Lay the dry rice paper (bánh tráng) in the centre of the pan.
- Place the nori sheet (Obento yaki nori) on top of the rice paper.
- Gently pour your egg mixture over the seaweed. Watch it spread and settle.
- Leave it alone for about a minute, or until the egg is just cooked through. Resist the urge to poke it.
- Slide a spatula underneath and fold it in half.
- Serve it with your favourite sauce, like creamy Kewpie mayo and spicy Sriracha for a kick.
