One Pan Red Curry Dumplings

Ingredients
- 1 can coconut milk
- 2 tbsp red curry paste
- 3 garlic cloves minced
- Ginger minced
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp peanut butter
- 1 tbsp sesame oil
- 2 tsp rice vinegar
- Juice of 1 lime
- 4 cups of bok choy chopped
- 1 red capsicum chopped
- 15 frozen dumplings
- Spring onion and sesame seeds to dress
- One cup of rice

Method
- Preheat oven to 200 degrees Celsius
- Cook one cup of rice as per packet instructions
- In an oven pan whisk together coconut milk, curry paste, garlic, ginger, soy sauce, oyster sauce, peanut butter, sesame oil, rice vinegar and lime juice
- Stir in chopped bok choy and capsicum.
- Arrange frozen dumplings on top in a single layer
- Cover with foil and bake in the oven for 25-30 minutes
- Finish with spring onions and sesame seeds. Serve hot.
