Ingredients
- Squid fish sauce 4 tbsp
- Minced chicken 500grams
- Lime juice 4 tbsp
- Bunch Spring onion and red onion x2
- Chilli flakes 1 tspn
- Kaffir lime leaves x2
- Bunch of Mint
- Bunch of Thai Coriander
- 1/3 cup dry rice

Method
- Cook dry rice, kaffir lime leaf and chilli flakes in frypan until rice is golden brown. Finely chop in food processor. Save for later
- Combine lime juice and fish sauce, save for later. Slice red onion and spring onion, chop mint and coriander.
- Heat vegetable oil in pan, add minced chicken and fry until cooked, add onions, mint and coriander and lime juice and fish sauce and cook lightly. Finally add fried chilli flakes, rice and kaffir lime leaves. Fold through.
- Serve in lettuce cups, with boiled rice, fresh chilli’s and extra lime. Delicious!
