Pad krapow (chilli basil minced pork)

- 1kg pork mince

Method
- Cook Jasmin rice in a pot or rice cooker.
- For the pad krapow sauce mix 1/4 cup soy sauce, 1/4 cup water, 2 tbsp dark soy sauce, 1tbsp fish sauce, 1 tbsp oyster sauce, 1/4 cup sugar and 1 teaspoon msg.
- Slice 3-4 spring onions keeping them the tops and bottoms separate, dice 3-4 cloves garlic, chop as many chilli’s as your spice levels allow.
- In a pan on high heat add neutral oil, add spring onions to the pan and cook for 1 minute then add chilli and garlic and season with salt and cook for another minute.
- Add pork mince and season with salt and white pepper. Cook while breaking up pork constantly with wooden spoon. Once browned add pad krapow sauce and reduce until it glazes the pork. Add basil and toss through.
- In another pan heat to high add neutral oil and fry egg sunny side up until golden and crispy on the bottom but yolk still runny.
- Put a rice in bowl and top with pork mince and fried egg, garnish with spring onion tops and a roasted peanut.
