Ingredients
- 2 tablespoons vegetable oil
- 300g pork belly, thinly sliced
- 3 tablespoons thai red curry paste
- 200g green beans, trimmed and cut into 1 inch pieces
- 2 teaspoons ginger, grated
- 1 tablespoon fish sauce
- 1.5 tablespoons brown sugar
- TO SERVE:
- kaffir lime leaves, finely sliced
- red chilli, finely sliced
- steamed rice

Method
- Cook rice according to packet directions.
- Heat the oil in a wok or large frying pan over medium heat. Add the red curry paste and fry for 2-3 minutes until the oil starts to separate from the paste. Increase the heat to medium high and add the pork and ginger, stir fry for 5-6 minutes until the pork is cooked through and coated in the paste, add the green beans and cook for a further 2-3 minutes until bright green, cooked but still crisp. Add the fish sauce and brown sugar and mix well. Taste and adjust seasoning if needed.
- Transfer to bowls with steaming rice, top with kaffir lime leaves and sliced chilli.
