Ingredients
- 250g tofu (cut into cubes)
- 500 gram fresh wide rice noodles
- 1 egg
- 1 bunch Asian broccoli (roughly chopped)
- 1.5 tbsp oyster sauce
- 1tbsp soy sauce
- 2tsp dark soy sauce
- 2tsp rice wine vinegar
- 2tsp brown sugar
- Green onion to serve (sliced thinly)
- Peanuts to serve (crushed)
- 2 cloves garlic (crushed)

Method
- Prepare rice noodles according to packet and set aside.
- Make the sauce with the light and dark soy, sugar, rice wine vinegar, oyster sauce. Stir until the sugar dissolves.
- In a large wok, heat up some neutral oil. Add tofu and garlic and cook until slightly crispy.
- Add in the stems of the Asian broccoli and cook for 1-2 minutes. Add the greens until wilted, another 1-2 mins.
- Move everything in the wok to the sides, crack in the egg and scramble. Once cooked, stir throughout.
- Empty the wok out onto a plate. Add some more oil to the wok, and add in the cooked rice noodles.
- Stir in the sauce and caramelise for 1-2 mins. Add all the other ingredients back and toss to mix.
- Plate into bowls add green onions and peanuts on to garnish.
