Pad thai

Ingredients
- Fish sauce
- 1 tbsp peanut oil
- 400g of prawns
- 2 tbs tamarind paste
- 1 tbs brown sugar
- 3 tbs soy sauce
- 2-3 tsp fish sauce
- 1 egg
- 1 Cup of Brown sprouts
- 1 bunch of chives
- 1 Lemon
- 1 shallot (chopped)
- 1 packet of pad Thai noodles
- Crushed peanuts

Method
- Cook the prawns to golden and set aside.
- To make the sauce combine fish sauce, sugar, soy sauce, tamarind paste and water in a saucepan. Heat to combine the ingredients.
- Place pad thai noodles in hot water and soak for 15 mins.
- Heat oil in a large saucepan and add in the shallots, pan fry till golden. Drain the noodles and add half of the noodles in. Add the mixed sauce, cook until sauce is covering the noodles.
- Cook the noodles until it is slightly soft, add cooked prawns back in, add the bean sprouts and chives. Stir to combine.
- Push noodles to the side and crack an egg, cover egg with the noodles. Heat for one minute and mixed the egg through the noodles.
- Add crushed peanuts on top and lemon to your taste.
