Panaeng curry

Ingredients
- 2 tbsp Valcom panaeng curry paste
- 1 tbsp vegetable oil
- 400g chicken thigh
- 400ml coconut milk
- 2 tbsp peanut butter
- 1 tbsp finely chopped kaffir lime leaves
- 2 tbsp sugar
- 2 tbsp fish sauce
- Chopped green beans, carrot and capsicum

Method
- Heat oil, add curry paste, cook for 2 mins
- Add chicken and cook for 4 mins.
- Add coconut milk, kaffir lime leaves, peanut butter and veggies. Simmer for 10 mins.
- Add fish sauce and sugar to taste
- Serve with rice, sliced cucumber and coriander. Yummo!
