Ingredients
- Onion
- Sesame oil
- 400gm chicken
- 300 gm potato
- Small eggplant
- Water chestnut
- Coconut milk

Method
- Heat oil, cook onion, add curry base
- Add chkn stock, potatoes, simmer 20 mins
- Add eggplant, chicken, water chestnut, simmer for 15
- Add coconut milk, simmer for 15 mins
