Perfect Thai Vege curry

Ingredients
- 1/2 cup young corn
- 1/2 bunch spinach
- 1 large potato cubed
- 1 cup cubed pumpkin
- 1 cup cubed sweet potato
- 1 diced red capsicum
- 400ml coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1-2 tablespoons Valcom red curry paste

Method
- Heat coconut milk in a pan, add soy sauce, sugar and curry paste and stir until oil appears on top.
- Add pumpkin and potatoes and simmer for 20 minutes until soft.
- Add corn, capsicum and spinach and cook for a further 5 minutes.
- Serve as is or with a rice of your choice.
