Pescatarian sushi and keto sushi

Ingredients
- 6 carrot grated
- Spinach chopped
- Oil
- Seaweed
- Can of tuna

Method
- Grate carrot
- Chop spinach
- Cook grated carrot and spinach in a pot with some oil
- Season with salt and cook till carrot and spinach are softened
- Once cooked, cut seaweed into half and spread the vegetable mixture onto the seaweed
- Top with some tuna on the seaweed
- Roll the seaweed and vegetable mixture with tuna into rolls to make the vegetarian and keto sushi
- Enjoy!
